Hey Windmill Cove friends! 🌊 Celebrate World Oceans Day with our fun and delicious Ocean-Themed Cupcakes. Perfect for a riverside picnic, beach day, or live music event at Windmill Cove, these cupcakes bring the spirit of the sea to your taste buds.

Ingredients:

For the Vanilla Cake:

1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

¼ teaspoon salt

½ cup unsalted butter, room temperature

1 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

½ cup whole milk

Blue food coloring

For the Frosting and Decoration:

2 cups white frosting (store-bought or homemade)

Blue food coloring

Blue sugar crystals

Mini fish-shaped gummy candies

Paper cupcake liners

Instructions:

Prepare the Cupcakes:

Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

Make the Batter:

In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes.

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

Add a few drops of blue food coloring to the batter and mix until you achieve a light ocean-blue hue.

Bake:

Fill each cupcake liner about two-thirds full with the blue batter. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.

Frosting Fun:

While the cupcakes cool, prepare your frosting. If you’re using store-bought white frosting, divide it into two bowls. Leave one bowl white and add blue food coloring to the other until you achieve a sea-blue color.

Decorate:

Frost half of the cupcakes with the white frosting and the other half with the blue frosting. Sprinkle blue sugar crystals on top for a sparkly ocean effect. Finish by adding a few mini fish-shaped gummy candies on each cupcake.
