Get ready to savor the taste of tradition with a twist! As we celebrate National Apple Pie Day, we're bringing you a delightful recipe that's perfect for any occasion. These Mini Apple Pies are not only bursting with the flavors of cinnamon-spiced apples but also wrapped in flaky pastry for a handheld delight that's hard to resist.


Ingredients:

2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/4 cup granulated sugar

1/4 cup brown sugar

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1 tbsp lemon juice

1 tbsp all-purpose flour

1 package refrigerated pie crusts (2 crusts)

1 egg, beaten (for egg wash)

1 tbsp coarse sugar (optional, for sprinkling)


Note:

Get creative! You can use prepared mini pie crusts, mini pie crust pans, or even a cupcake sheet, it's up to you.


Instructions:

Preheat and Prepare:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.


Make the Apple Filling:

In a medium bowl, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Mix well to ensure the apples are evenly coated.


Prepare the Pie Crusts:

Roll out the refrigerated pie crusts on a lightly floured surface. Use a round cookie cutter (about 4 inches in diameter) to cut out circles from the dough. Re-roll the scraps as needed to get more circles.


Fill the Mini Pies:

Place a tablespoon of the apple filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.


Add the Egg Wash:

Transfer the mini pies to the prepared baking sheet. Brush the tops of the pies with the beaten egg. Sprinkle with coarse sugar if desired.


Bake to Perfection:

Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown and the filling is bubbly. Remove from the oven and let cool slightly before serving.
